僧 = a monk (originally a transliteration of Sanskrit saṅgha); 俗 here means 'secular / worldly' (the same 俗 as in 风俗 'customs'). 僧俗 is a Buddhist-flavored word — for a general 'religious vs secular' split modern Chinese says 教俗 or just 出家人和在家人.
