The head of a large freshwater fish, most often bighead carp, cooked for its soft meat. It is steamed under chopped chili, a Hunan dish, or stewed in a clay pot.
In Chinese cuisine, the fish head is considered a delicacy, not scraps. 剁椒鱼头 (fish head with chopped chili) is a signature Hunan dish, and fish-head hotpot is widely popular. At banquets, serving a whole fish with the head toward the guest of honor is a mark of respect.
