Small mushrooms with marbled brown caps on white stems, firm and slightly crunchy once cooked, with a mild, nutty taste. They are cooked, never eaten raw, in soups, hotpot and stir-fries. A white kind is sold as 白玉菇.
Beech mushroom stir-fried with meat is a home-style dish.

Literally 'crab-flavor mushroom' - named because the cooked mushroom is said to taste subtly like crab meat. Sold in supermarkets in clusters joined at the base; in Japan, the same species is one of the shimeji (本しめじ, hon-shimeji) varieties.
