杏仁饼 is a signature souvenir pastry of Macau and Zhongshan (the original home of the recipe, brought to Macau by the Xianghui
咀香园 bakery in 1918). The 'cookie' is pressed from mung bean flour, sugar, lard, and a whole almond, then briefly baked to a crumbly melt-in-the-mouth texture.
