Made from naked oat (莜麦) grown on the cold plateau of Shanxi and Inner Mongolia. The dough is shaped by hand into honeycomb-style rolls (栲栳栳), fish shapes (鱼鱼), or pushed flat with the thumb — 搓、推、卷 are all traditional techniques.
