A Huaiyang classic - fist-sized pork meatballs (sometimes with crab roe) braised slowly until the surface frays and resembles a lion's mane. 'Lion's head' refers to the look, not the ingredient. Two main styles:
红烧 (red-braised, dark and rich) and
清炖 (clear-stewed, light).
