Xi'an's signature banquet, developed by the Xi'an Jiaozi Restaurant (
西安饺子馆) at the Dongyuan Gate in the 1980s. Up to 200 varieties of dumpling are served in themed courses — some steamed, boiled, fried or soup-served — each with a different filling and an animal, flower or geometric shape. A set-piece tourist meal.
