Chunks of beef, often brisket, braised slowly with soy sauce, sugar and spices such as star anise until tender, in a glossy brown sauce. Often cooked with potato or carrot; some kitchens add chili or chili bean paste.
My favorite is Master Kong red-braised beef noodles.
Tips
usage
红烧 (literally 'red-cook') is a core Chinese braising technique: soy sauce, sugar, and aromatics reduce into a glossy reddish-brown sauce. Works with 牛肉, 排骨, 鱼, 肉 etc. - slot any protein in.
