折 here is read zhé (to fold), not shé (to break/snap, as in 树枝折了 'the branch broke') or zhē (to flip, as in 折腾 zhēteng). 折叠 'fold-and-stack' is the canonical 'foldable' modifier: 折叠椅 (folding chair), 折叠床 (folding bed), 折叠屏 (foldable screen).
