Shelled shrimp cooked in a sauce of chili bean paste, ginger and garlic, reduced until it clings to them. Sweet, savoury and mildly hot. A Sichuan way of cooking.
Gānshāo xiārén de tāngzhī shōu de hěn gān, jiàng dōu guǒ zài xiārén shàng.
In dry-braised shrimp the sauce is reduced right down, so it all clings to the shrimp.
Tips
usage
干烧 "dry-braising" means cooking until the liquid has almost all gone, so the sauce sticks to the food instead of pooling on the plate. 干 is "dry" here.
