A coarse, bright red mash of chopped chili and salt, fermented in jars and popular in Hunan. It is steamed over fish heads and tofu or fried with eggs and in stir-fries; it is already salty, so dishes need little more.
People in Hunan often make their own chopped chilies: they chop fresh chilies fine, add salt and pack them into a jar to cure.
